Since it’s been raining here a lot lately, we decided to have a family movie day this week. I’ve been promising Arik this for a while now, so I was happy to finally get around to it. He picked out Ratatouille to watch, I popped popcorn, we stretched out on the couch and spent the afternoon there.

At halftime, I made this pineapple coconut smoothie to try and bring some summer feeling into the place. It totally worked! 🙂 If you haven’t yet, I highly recommend having a movie day. It really is fun and relaxing for everyone involved (which often times is not the case with toddler activities) and it is a great change-up to those busy weekday afternoons. Oh and the smoothie; I highly recommend that too.  It just sweetened up the whole day! 🙂

Pineapple and Coconut Smoothie

Ingredients
  • 1 cup (about 2 handfuls) pineapple chunks
  • 1 cup/240ml coconut milk
  • 1 cup (about 2 handfuls) ice cubes
  • ½ cup/120ml milk
  • 1-2 tablespoons sweetened condensed milk
  • some shredded coconut, toasted, for garnish
Instructions
  1. Combine all of the ingredients except for the shredded coconut in a blender and blend until smooth.
  2. Pour into glasses, top with toasted coconut and serve immediately.
Notes
*To toast the shredded coconut, just dry-roast in a pan over medium heat until golden brown.
*Unfortunately, this smoothie cannot be made ahead of time and should be served immediately after mixing.

Arik is a huge fan of all things that can be consumed through a straw. That is why we frequently have this smoothie for breakfast or have various “milkshakes” such as a banana milk, this strawberry milk or this week, we tried something new, and had this hazelnut milk…with chocolate, of course.

This milk is not only delicious, it’s quite informative too. For instance, after drinking some, it informed me that I have suddenly developed an allergy to hazelnuts. I made a couple of glasses for Arik and myself, had a sip, and my throat started itching a little. Hmm, strange, I thought, must be getting a cold, oh well, back to my delicious glass of milk. After half of the glass was gone and my throat was itching like crazy, the nurse in me finally came out and I stopped drinking.

After a couple of hours, I ate a hazelnut because I wanted to be absolutely certain. And low and behold, the itching started again. Shoot! Hazelnuts are my favorite nut of all time! Arik was really empathetic of course, and asked if I was full when I stopped drinking. Before I was done answering, he had taken the glass, finished off the milk and proudly said, “Look mama, I helping you!”

Hazelnut Chocolate Milk

Ingredients
  • ¾ cup/100g hazelnuts
  • some water for soaking
  • 2 cups/480ml milk
  • 1-2 tablespoons chocolate syrup or powder
Instructions
  1. Soak the hazelnuts in water overnight.
  2. Drain the hazelnuts and place them in a food processor with the milk.
  3. Blend well and then strain the milk over a cheese cloth.
  4. Pour the milk into glasses and add chocolate syrup as desired.
Notes
*This hazelnut/milk ration is quite mild so if you prefer it to taste nuttier be sure add more hazelnuts or reduce the milk.
*If you want this to be dairy-free, just replace the milk with water.
*Rather than just tossing out the left-over hazelnuts, you could use them for baking!

Pomegranate Lassi | My Little Gourmet

Since my parents are in town right now visiting us, we’ve been doing a lot of eating out. The other day we went to a Vietnamese restaurant, where Arik, by the way, ate two large summer rolls with tofu and fish sauce…sometimes I am amazed at what that kid eats. Anyway, I ordered Arik and myself a mango lassi to share to see it it would be something he likes. My question was quickly answered when I gave him the glass, blinked, and the whole thing was basically gone. So much for sharing. 🙂 After getting such positive feedback from him, I decided to make him a lassi at home, with pomegranate instead of mango.

I already told you guys about our current pomegranate obsession in my Chicken Salad post, which is also where you can find  easy step-by-step instructions on how to de-seed a pomegranate. So I thought, why not turn those delicious little seeds into a lassi! And I am so glad I did…it was sooo good. Since pomegranates can be a little on the sour side, I went ahead and added some honey. If that is still not sweet enough for your kids you could always toss some mango in there to sweeten things up. Alright, next mission: a homemade kid-friendly summer roll… 🙂

Ingredients
  • 1 pomegranate
  • ½ cup/120ml water
  • 1¼ cup/300g plain yogurt
  • 1-2 tablespoons honey
Instructions
  1. De-seed the pomegranate and blend the seeds with the water. Strain the mixture in order to get the hard part of the seeds out.
  2. Blend the pomegranate juice with yogurt and honey and serve cold.
Notes
*If just the pomegranate juice isn't sweet enough for your kids, then you can add some mango for sweetness.

Mother’s Day is coming up, so I’ve decided to share a recipe from my mother with you all. My mom used to make this milk for me when I got home from school and I always loved it. To this day I still enjoy drinking these fruit milks!

A while ago I decided to make one for Arik to see if he would like them as much I always did, and low and behold he drank both servings, leaving none for me… Now he has one at least once a week and always gets really excited when he sees me getting out the blender. I love that something so easy and delicious is healthy for us too. I also love the fact that something my mom and I used to enjoy together, I can now enjoy with my son. Happy Mother’s Day!

Ingredients
  • 1 ripe banana
  • 4-5 strawberries
  • 1 tablespoon lemon juice
  • 1-2 tablespoons honey
  • 1½ cups/ 375ml milk
Instructions
  1. Toss all ingredients into a blender and blend well.
  2. Serve over some ice cubes or a scoop of vanilla ice cream.

 Very Berry Breakfast Smoothie | My Little Gourmet

If I let Arik pick his own breakfast he would most likely choose to just drink 5 or 6 glasses of milk and not eat anything. With this thought in mind, I decided to come up with a breakfast in a glass for him. This way he gets everything he needs to start his day and he can drink it all through a straw, which, of course, makes him very happy. It also makes me very happy because it takes about 5 minutes to prepare and there’s enough smoothie for me as well.

I used frozen berries for our smoothie, so if you use fresh you may want to add some ice cubes before blending so you get a nice cold smoothie. If your little ones prefer it sweet be sure to add 1 or 2 tablespoons of honey. Depending on how thick you like your smoothies just increase or decrease the amount of milk until you get the consistency you want. Cheers!

Ingredients
  • 1 banana
  • ½ cup strawberries, frozen or fresh
  • ¼ cup blueberries, frozen or fresh
  • ½ cup greek yogurt
  • ¼ cup oats
  • ½ cup fresh-squeezed orange juice, about 1 orange
  • ½ cup milk
Instructions
  1. Toss all ingredients in a blender and blend to the wanted consistency.
Notes
*If your little ones prefer it a little sweeter, just add 1-2 tablespoons of honey. *If you use fresh fruit you may want add some ice cubes before blending. *Depending on how thick you like your smoothies just increase or decrease the amount of milk you use.
