Chocolate Chip Banana Muffins

Hello all!

If you are one to check in here every once in a while, you’ve probably noticed that it has been veeerrryyy quiet for a veeerrryyy long time. I apologize for that. Unfortunately, it is going to remain this quiet for now. Regretfully, I’m going to have to stop this little blogging hobby of mine, due to lack of time and various personal reasons. I do hope, at some point I will be able to start up again. Of course, I will leave all of the existing recipes online for you to have at your disposal.

Since I didn’t want to just leave you all empty-handed, here is one last recipe to try out…something sweet, of course! 🙂 These muffins are the perfect item to bring along to kids birthday parties or potlucks. If your kids don’t mind, some chopped up walnuts are a great addition.

Ingredients
  • 1 stick/120g butter, softened
  • ¾ cup/160g sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup/220g sour cream
  • 2 cups/260g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup/about 3 mashed ripened bananas
  • 1 cup/150g chocolate chips
Instructions
  1. Preheat the oven to 325℉/160℃.
  2. In a large bowl cream together butter and sugar.
  3. Mix in eggs, vanilla, and sour cream.
  4. In a separate bowl, whisk together flour, baking powder, baking soda and salt.
  5. Add flour mixture to sugar mixture and slowly and carefully stir just until combined.
  6. Fold in bananas and chocolate chips.
  7. Pour into greased muffin pan to make 24 muffins.
  8. Bake in preheated oven for 25 minutes until lightly browned. An inserted toothpick should come out clean.
  9. Allow muffins to cool a little, remove from muffin pan, and cool completely on a rack.

Mini Oatmeal Banana Cottage Cheese Pancakes | My Little Gourmet

A bit of a long title, I know, but I just felt that every one of these ingredients needed to get a mention. Especially cottage cheese…I love cottage cheese! It’s low in fat, high in protein and full of healthy vitamins and minerals. And best of all, it’s delicious!

I’ve always wanted to try out cottage cheese pancakes, and when I found a recipe that included oats and bananas, I knew it would be a perfect recipe for Arik. We ate these mini pancakes topped with maple syrup, strawberries, and blueberries. Since it was only the two of us eating, some were left over, which Arik ate as an afternoon snack with no syrup or anything. I’m thinking these would be great to pre-make, freeze and then pop in the toaster in the mornings.

Once you pour the batter in the pan, you can add blueberries, chocolate chips, etc. to the pancakes. If you want to make mini pancakes as well, an easy way to do it, is to fill an empty squeeze bottle with the batter and then use that to portion out small amounts. I’ve made these both as minis, and regular sized pancakes, and Arik could have cared less what size they were, so I think from now on I will save some time and just use a tablespoon to plop some batter in the pan. 🙂 If you guys are needing some more breakfast ideas for your little ones come check out my Pinterest Board, Breakfast for Kids to gather some inspiration! 🙂

Mini Oatmeal Cottage Cheese Banana Pancakes

Ingredients
  • 1 cup/80g old-fashioned or quick cooking oats
  • 1 banana
  • 1 cup/200g cottage cheese
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • butter for cooking
Instructions
  1. Combine all ingredients in a blender and blend until batter is quite runny.
  2. Lightly coat a nonstick skillet or griddle with butter and heat over medium low heat.
  3. Drop about a tablespoon of batter onto skillet and cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more butter and remaining batter.
Notes
*An easy way to make mini pancakes is to fill the batter into an empty squeeze bottle and use it to drop small amounts of batter onto the skillet.
*Once the batter is on the skillet you can drop blueberries, chocolate chips, etc. onto the pancake.

Mother’s Day is coming up, so I’ve decided to share a recipe from my mother with you all. My mom used to make this milk for me when I got home from school and I always loved it. To this day I still enjoy drinking these fruit milks!

A while ago I decided to make one for Arik to see if he would like them as much I always did, and low and behold he drank both servings, leaving none for me… Now he has one at least once a week and always gets really excited when he sees me getting out the blender. I love that something so easy and delicious is healthy for us too. I also love the fact that something my mom and I used to enjoy together, I can now enjoy with my son. Happy Mother’s Day!

  • 1 ripe banana
  • 4-5 strawberries
  • 1 tablespoon lemon juice
  • 1-2 tablespoons honey
  • 1½ cups/ 375ml milk

Last week I attempted to ignore celebrated my 30th Birthday. 🙂 Actually, it was a good day and I am really thankful for all of the great people in my life. Yes, the majority of those people are halfway across the world, but still I am thankful that they are somehow in my life. The very best present I received that day though, came from my little guy. In order to explain this amazing present we are going to have to rewind a little and go back a few months. So, a couple of months ago (feels more like years) I started potty training Arik.  I hadn’t planned on starting this early on, but he was giving me some of the signs of being ready, so I thought, why not. Things were going great and we got so far as to no longer wearing diapers during the day. The only problem was, I had to constantly tell him to go to the bathroom because he would never let me know when he had to go. And this is where we got stuck….

After numerous weeks of the same old “Arik, do you need to pipi?”, “No”, followed by much fidgeting, “ARIK, do you need to PEE?”, “NO!”, “Alright, just let me know when you do”, “Mom, pipi” as a puddle starts to form around his feet. To top it off, we had to go somewhere for a week, which included a 5 hour road trip. I ended up just putting him in diapers for this because I knew my nerves would not be able to handle it. As soon as we got home, I went back to no diaper and it was as if we were starting at the beginning again. I was really close to just giving up and trying again a few months down the road, but something inside me just couldn’t throw in the towel. So I started the whole process over. And then, a few days later, my birthday came…

The day started as usual; I put his underwear on him and said (like I always did), “Now remember, you only have underwear on so be sure to tell me when you have to go potty”, and I got the usual response “yeah, yeah”.  After about an hour, I hear, “Mama pipi” and I immediately run over to start cleaning up the mess…but there wasn’t one. So I take him to the bathroom, still a little confused about what is going on, and low and behold he pees in the potty. This, of course, was followed by about 10 minutes of cheering, hugging and clapping. A few hours later he did the exact same thing. I didn’t think I would ever be saying this about pee, but it was pretty much the greatest present ever for this mama. Now, about a week later, we are without diapers during the day and have had no puddles on the floor. And, this, my friends, needs to be celebrated with some Chocolate Chip Zucchini Bars…

*Update: I wrote this post yesterday and Arik must have been aware of this because just this morning he decided to wet his pants…not once, but twice. I don’t care, I’m still eating those bars…

Chocolate Chip Zucchini Bars with Vanilla Cream Cheese Frosting

Ingredients
Chocolate Chip Zucchini Bars:
  • ½ cup/100g sugar
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 cup/240 ml applesauce, unsweetened
  • 1 ripe banana, mashed well
  • 2 cups/280 g all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1¼ teaspoons baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 medium zucchini, shredded finely (makes about 1¼ cup)
  • ½ cup/75 g semisweet chocolate chips
Vanilla Cream Cheese Frosting:
  • 6 oz./175 g cream cheese
  • 4 tablespoons powdered sugar
  • 1½ teaspoons vanilla extract
Instructions
Chocolate Chip Zucchini Bars:
  1. Preheat the oven to 350℉/175℃.
  2. Grease a 9 x 13 in baking dish and place a piece of parchment paper on the bottom.
  3. Place sugar, oil and eggs in a large bowl and beat with a mixer on low speed until well-blended.
  4. Stir in the applesauce and mashed banana.
  5. In a medium bowl, sift together flour, cocoa powder, baking soda, cinnamon and salt. Stir well with a whisk until combined.
  6. Add the flour mixture to the sugar mixture, beating just until combined and moist.
  7. Stir in the shredded zucchini and chocolate chips.
  8. Pour the batter into the prepared baking dish and bake in pre-heated oven for 20-25 minutes or until an inserted toothpick comes out clean.
  9. Allow bars to cool and top with the frosting (if desired).
Vanilla Cream Cheese Frosting:
  1. Combine ingredients in a medium bowl and beat with a mixer until smooth and creamy. Add as much or as little sugar until desired taste and texture is achieved. Spread onto the cooled bars.
Notes
As you can see, I use very little sugar in my frosting, so if you like it sweet be sure to add more until the desired sweetness is reached.

 Very Berry Breakfast Smoothie | My Little Gourmet

If I let Arik pick his own breakfast he would most likely choose to just drink 5 or 6 glasses of milk and not eat anything. With this thought in mind, I decided to come up with a breakfast in a glass for him. This way he gets everything he needs to start his day and he can drink it all through a straw, which, of course, makes him very happy. It also makes me very happy because it takes about 5 minutes to prepare and there’s enough smoothie for me as well.

I used frozen berries for our smoothie, so if you use fresh you may want to add some ice cubes before blending so you get a nice cold smoothie. If your little ones prefer it sweet be sure to add 1 or 2 tablespoons of honey. Depending on how thick you like your smoothies just increase or decrease the amount of milk until you get the consistency you want. Cheers!

  • ¼ cup oats
  • ½ cup fresh-squeezed orange juice, about 1 orange
  • ½ cup milk
Instructions
  1. Toss all ingredients in a blender and blend to the wanted consistency.
Notes
*If your little ones prefer it a little sweeter, just add 1-2 tablespoons of honey. *If you use fresh fruit you may want add some ice cubes before blending. *Depending on how thick you like your smoothies just increase or decrease the amount of milk you use.

 Nutella Hazelnut Banana Bread | My Little Gourmet

Say that 10 times really quickly, nutella hazelnut banana bread, nutella hazelnut banana bread…ok I give up, just give me a slice. I found this gem of a recipe on Just One Cookbook and had to try it out.  It’s sweetened with only honey and nutella and spiced up a little with some cinnamon, which gives it a really nice warm flavor.  It was the perfect treat for this time of year.

We had some of the neighborhood kids over to share this loaf of deliciousness and it was definitely just as popular amongst the wee ones.  Not really surprising with ingredients like Nutella, bananas, and honey. Regardless if it’s being baked for adults or kids, my guess is they are going to eat it, enjoy it and ask for more…

Nutella Hazelnut Banana Bread | My Little Gourmet

Nutella Hazelnut Banana Bread

Serves: 1 9x5 loaf
Ingredients
  • 1¾ cup/240g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅓ cup/90g Nutella
  • ½ cup/120ml honey
  • 1½ cup/about 4 ripe bananas, mashed
  • ½ cup/120ml buttermilk
  • 1 egg
  • ½ teaspoon vanilla extract
  • ½ cup/50g hazelnuts, chopped
Topping:
  • 2 tablespoons hazelnuts, chopped
Instructions
  1. Preheat the oven to 350℉/180℃. Grease a loaf pan and line the bottom with a piece of parchment paper.
  2. Whisk the dry ingredients (flour, baking powder, baking soda, salt and cinnamon) together in a large bowl.
  3. Combine the Nutella and honey in a small bowl and heat in the microwave until melted (about 30 seconds) and set aside to cool slightly.
  4. Combine mashed banana, buttermilk, egg and vanilla extract in a medium bowl. Add cooled Nutella/honey mixture and stir together.
  5. Pour Nutella mixture into the flour mixture, add the hazelnuts and stir just until combined.
  6. Pour batter into greased loaf pan and top with hazelnuts.
  7. Bake for 50-60 minutes rotating pan halfway through. Bread is done when inserted toothpick comes out clean. Cool in the pan on a wire rack for 10 minutes, remove from pan and allow to cool completely.
  8. Wrap the bread well and store at room temperature for 2 days or in the refrigerator for up to 4 days.
